Cowboy Candy Recipe

Cowboy confectionery, often referred to as “Cowboy Candy,” is a delightful treat that combines sweetness and heat, typically featuring candied jalapeños. This treat is a perfect blend of spicy, sweet, and tangy, making it a popular addition to many dishes. Here is a comprehensive recipe for Cowboy Candy:

Ingredients:

  • 1 pound (450 g) fresh jalapeños
  • 2 cups (400 g) granulated sugar
  • 1/2 cup (120 ml) apple cider vinegar
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon celery seed
  • 1/4 teaspoon ground cayenne pepper (optional, for extra heat)

Equipment:

  • Medium saucepan
  • Sharp knife
  • Cutting board
  • Sterilized glass jars with lids
  • Tongs or slotted spoon

Instructions:

Preparing the Jalapeños:

  1. Wash and Slice:
    • Wash the jalapeños thoroughly under cold water.
    • Using a sharp knife, slice the jalapeños into thin rings, about 1/4-inch thick. For a milder version, you can remove the seeds and membranes. Wear gloves to avoid skin irritation from the jalapeños.

Making the Syrup:

  1. Combine Ingredients:
    • In a medium saucepan, combine the granulated sugar, apple cider vinegar, turmeric powder, garlic powder, celery seed, and ground cayenne pepper (if using).
    • Stir the mixture over medium heat until the sugar is completely dissolved and the syrup is smooth.
  2. Boil the Syrup:
    • Bring the syrup to a rolling boil. Reduce the heat and let it simmer for about 5 minutes, stirring occasionally.

Cooking the Jalapeños:

  1. Add Jalapeños:
    • Carefully add the sliced jalapeños to the syrup mixture.
    • Simmer the jalapeños in the syrup for about 4-5 minutes. Stir occasionally to ensure all jalapeño slices are evenly coated and cooked.

Canning the Cowboy Candy:

  1. Sterilize Jars:
    • While the jalapeños are simmering, sterilize your glass jars and lids by boiling them in water for at least 10 minutes.
  2. Fill the Jars:
    • Using tongs or a slotted spoon, carefully transfer the cooked jalapeño slices into the sterilized jars. Leave some headspace at the top.
    • Pour the hot syrup over the jalapeños in the jars, ensuring they are fully submerged and leaving about 1/2 inch of headspace.
  3. Seal the Jars:
    • Wipe the rims of the jars with a clean, damp cloth to remove any syrup residue.
    • Place the lids on the jars and screw on the bands until fingertip-tight.

Processing the Jars:

  1. Water Bath Canning:
    • Process the filled jars in a boiling water bath for about 10 minutes. Ensure the jars are fully submerged in water.
    • Remove the jars from the water bath using jar tongs and let them cool on a towel or wire rack. You should hear a popping sound as the jars seal.

Storing and Serving:

  • Storage:
    • Store the sealed jars in a cool, dark place. Let the Cowboy Candy sit for at least 2 weeks before opening to allow the flavors to meld and develop.
  • Serving Suggestions:
    • Cowboy Candy can be used in various dishes. Serve it on cream cheese with crackers, as a topping for burgers and hot dogs, mixed into salads, or as a sweet and spicy addition to sandwiches.

Tips and Variations:

  • Adjusting Heat:
    • If you prefer a milder candy, use fewer jalapeños or substitute some with bell peppers.
  • Flavor Enhancements:
    • Add a touch of honey or maple syrup to the syrup mixture for an extra layer of sweetness.
  • Creative Uses:
    • Mix Cowboy Candy into cornbread batter for a sweet and spicy twist or incorporate it into barbecue sauces for added depth of flavor.

Cowboy Candy is a versatile and delicious treat that brings a unique combination of sweetness and heat to any dish. Whether enjoyed as a snack or used to enhance the flavors of your favorite recipes, this confectionery delight is sure to become a favorite in your culinary repertoire.
