  • Sterilized glass jars with lids
  • Tongs or slotted spoon

Instructions:

Preparing the Jalapeños:

  1. Wash and Slice:
    • Wash the jalapeños thoroughly under cold water.
    • Using a sharp knife, slice the jalapeños into thin rings, about 1/4-inch thick. For a milder version, you can remove the seeds and membranes. Wear gloves to avoid skin irritation from the jalapeños.

Making the Syrup:

  1. Combine Ingredients:
    • In a medium saucepan, combine the granulated sugar, apple cider vinegar, turmeric powder, garlic powder, celery seed, and ground cayenne pepper (if using).
    • Stir the mixture over medium heat until the sugar is completely dissolved and the syrup is smooth.

Cooking the Jalapeños:

  2. Fill the Jars:

    • Pour the hot syrup over the jalapeños in the jars, ensuring they are fully submerged and leaving about 1/2 inch of headspace.
  3. Seal the Jars:
    • Wipe the rims of the jars with a clean, damp cloth to remove any syrup residue.
    • Place the lids on the jars and screw on the bands until fingertip-tight.

Processing the Jars:

  1. Water Bath Canning:
    • Process the filled jars in a boiling water bath for about 10 minutes. Ensure the jars are fully submerged in water.
    • Remove the jars from the water bath using jar tongs and let them cool on a towel or wire rack. You should hear a popping sound as the jars seal.

Storing and Serving:

  • Storage:
    • Store the sealed jars in a cool, dark place. Let the Cowboy Candy sit for at least 2 weeks before opening to allow the flavors to meld and develop.
